Vegan Whole Grain Oatmeal Cookies
with Chocolate Chips
My Vegan Whole Grain Oatmeal Cookies are a modified version of a recipe from the Quaker Oats website. I used less sugar and fat, and made them more whole grain.
I actually made them at the same time as these Healthy Oat Breakfast Bars (recipe to come.) I figured, bake once, clean once, eat treats all week! Plus, all the more to share!
I never was a big time baker, although I'm enjoying it more and more. Aside from a holiday or celebratory dessert, I tend to prefer baked goodies that are lower in sodium, fat and refined flour and sugar.
My mother-in-law did a lot of baking. After both of Don's parents passed away, we cleaned out their home, and as such, we inherited some baking supplies, including a BIG bag of brown sugar and all purpose flour, hence, I made use of them both. I used 3/4 cup of brown sugar + a bit of stevia, and it was not too sweet. This was spread out among a big batch of cookies!
Make a batch, and share with family, friends or co-workers. I shared these with the residents at my mom's residence, an Assisted Living facility focusing on dementia care. They ate them up!
Vegan Whole Grain Oatmeal Cookies Recipe
Vegan Whole Grain Oatmeal Cookies Ingredients
- 2 Tbsp. ground flax + 5 Tbsp. water
- 2&1/2 cups rolled or quick Oats
- 1&3/4 cups sprouted wheat flour, white whole wheat flour, or a blend of 1 cup of whole wheat flour + 3/4 cup all purpose flour (Whole wheat flour is from a red winter berry, white whole wheat is a different type of wheat that is white, but whole grain, and lighter and milder to use when baking)
- 2 tsp. non-aluminum baking powder
- 1/2 tsp. potassium bicarbonate (for lower-sodium) or baking soda
- 1&1/2 tsp. cinnamon
- 2 Tbsp. mild tasting oil, or coconut oil, melted and slightly cooled
- 1/2 cup apple sauce
- 1/4 cup nondairy yogurt, or sub 1/4 cup peanut butter, soy milk or other nondairy milk, or more apple sauce
- 3/4 cup organic brown sugar (I like Wholesome brand) + several drops of liquid stevia, or 1 packet of Trivia, OR use 1/2 cup maple syrup, and add 1-2 tablespoons more flour (The original recipe called for 1 cup brown sugar + 1/4 cup granulated sugar which I've reduced, but sweeten to your tastes)
- 2 tsp. vanilla
- 1/2 cup chopped pecans or walnuts (omit for lower-fat, especially if using peanut butter
- 1/2 cup vegan semi sweet/dark chocolate chips ~ or sub raisins, dried cranberries, or 1/4 cup of each
- Handful extra chocolate chips, nuts, or raisins for garnish, optional
Vegan Whole Grain Oatmeal Cookie Recipe Steps
- Preheat oven to 350ยบ and line a baking pan with parchment paper, or very lightly coat a pan if needed.
- In a small bowl, combine the ground flax seeds + water, and set aside.
- In a large mixing bowl, combine oats, flour, baking powder and soda, and cinnamon using a fork.
- In a separate bowl, combine oil, apple sauce, yogurt (or peanut butter or non dairy milk), brown sugar or other sweetener, and vanilla. If using peanut butter instead of yogurt or non dairy milk, stir well, adding a little water or non dairy milk to moisten it if needed.
- Add moist ingredients including flax seed + water blend to the oats. Stir just until well combined.
- Fold in nuts and chocolate chips or dried fruit, if using.
- Spoon onto baking pan, then press with the back of the spoon to gently flatten. (A small ice cream scoop makes this easier.)
- Optionally, add a few extra chips, raisins, or nuts to the top of each. It gives a nice presentation and ensures getting some of the extra goodies in each bite!
- Bake about 9-11 minutes, pulling out just prior to the centers being totally firm.
- Let sit on the baking tray for 10 minutes to finish baking and setting.
Note: To make it easier to scoop out batter, chill for 30 minutes prior to baking.
Macros for Vegan Whole Grain Oatmeal Cookies
I'm not 100% positive I entered the precise number of cookies made, as some of them were also pressed into a pan to make them into bars. But this is a close estimate of the macros: Per 23g cookie:
- Total cals - 79
- Total protein - 1.6g (7%)
- Total carb - 12.3g (65%)
- Total fat - 2.5g (27%)
